1 cup pink watermelon – cut into cubes
1 cup yellow watermelon – cut into cubes
1 cup baby heirloom tomatoes – cut into cubes
3/4 cup french feta
1/2 cup pulled mint leaves
8oz wild arugula
Combine + mix ingredients together in large salad bowl.
Basil Lime Vinaigrette
3/4 cup lime juice
1/4 cup olive oil
1 minced shallot
1 teaspoon dijon mustard
1 cup torn basil
Salt and pepper to taste
Blend ingredients together & drizzle over salad.
